Carob and Cream Homemade Candy With Tropical Traditions

Carob and Cream Homemade Candy Made With Organic Tropical Traditions Virgin Coconut Oil

They look a little messy but, don't let that fool you, they are so good!

For this delicious recipe I used this:

It's made with coconut cream. See  how white and ceamy it is? It's so yummy!

Here is the recipe that I created to go with this delish coconut oil:

1/3 c carob powder
3/4 C Organic Tropical Traditions Virgin Coconut Oil
1/2 C Crunchy Almond butter
20 drops Stevia w/Vanilla Cream

Add ingredients to a small mixing bowl. Stir to combine. Set aside.

Recipe for Coconut Cream:

1/3 c - 1/2 c   Coconut Cream (from canned organic coconut milk scraped off top)
10 drops of Sevia w/ Vanilla Cream

Put the coconut cream and stevia in a small mixing bowl. Stir vigorously to cream mixture. Use a mini muffin pan to make your candies.
First, add approximately 1 tsp of carob mixture. Then add approximate 1/2 tsp coconut cream mixture. Lastly, add carob mixture to top it off. Set pan in freezer for at least 30 minutes. Remove candies with a plastic knife. Makes 9 candies.

If you would like to make some of these delicious carob cream candies, first, you will need to purchase some Tropical Traditions Coconut Oil. You can check it out here:

Sandwich Rolls (Grain Free. Egg Free, Gluten Free) By Kelly V. Brozyna

I made these sandwich rolls that were created by Kelly V. Brozyna. She owns the web site: The Spunky Coconut.
In one word that I thought about these rolls are: Wonderful!
She has so graciously allowed me to put this recipe on my blog.

Here's the recipe:

Sandwich Rolls ( Grain Free, Egg Free, Gluten Free)

Add to the mixing bowl:
3 Tablespoons Golden Flaxmeal or 1.5 Tbsp Chia Seed meal (you can grind seeds or buy your own. You can use a coffee grinder).   (I used golden flaxmeal)
3 Tbsp applesauce (I used unsweetened)
2 Tbsp water
1 Tbsp apple cider vinegar
3/4 tsp xanthan gum or guar gum (I used xanthan gum)
1/4 cashew milk (or coconut milk, almond milk, etc)     (I used soy milk)
Beat with an electric mixer.

Add preferably in this order:
1 Tbsp honey
1/4 cup ghee (which is casein free) or coconut oil, soft or liquefied           (I used coconut oil)
1 tsp fresh chopped  rosemary- optional but highly recommended
1/4 tsp garlic powder
1/2 cup coconut flour
1/2 cup tapioca flour
1 tsp baking powder
1 tsp baking soda    (I used 2 tsp corn free baking powder)

Beat again until a mass begins to form.
Form the dough into a ball with your hands. ( Put some oil on your hands so the dough doesn't stick to them).

Divide the dough ball in three pieces.
Roll each third into a ball and flatten into the shape of a burger or a veggie pattie- about 4" wide by only 1" thick.

Bake at 350 degrees on unbleached parchment paper for about 24 minutes.

Best not refrigerated. Enjoy! (It was so very nice to eat a hamburger. I haven't had one with a bread for many many years)!

Kelly, thank you for the privilege to put this Awesome Sandwich Roll on my blog! I forever cherish these delicious rolls. I will think of you each time I eat them!

If you would be interested in purchasing Kelly's cookbook, that would be great!

A Gluten Free Holdiay Week 5: Homemade Cinnamon Coconut Granola

Welcome today! Today is week 5 of the Gluten Free Holday Blog Event!

This great event was created by Amy at: Simply Sugarfree and Gluten Free. You can check out her web site by going to:  http://www.simplysugarfreeandgluten.com

Today I am adding: Homemade Cinnamon Coconut Granola

4 cups Gluten Free Rolled Oats (such as Bob's Red Mill)
1 cup Unsweetened Coconut
1 1/2 cups Nuts  ( I used Sunflower Seeds, Pepitas, and Pecans) (You can use whatever nuts you like or can tolerate).
1 Teaspoon Ground Cinnamon
1/4 Cup Agave Nectar
25 drops of Stevia with Vanilla Cream (I used Now brand)
1/2 Cup Unsweetened Applesauce
1/2 Cup Oil (I used Canola but, Coconut oil is very good)

Spray large baking pan with vegetable spray (or whatever oil you choose). Preheat oven to 375'. Stir well together all the above ingredients. Put the granola in the large baking pan. See pic for size of pan.

I use this large size to brown the granola more evenly. Put in your preheated oven and set timer for 20 -25 minutes. Take pan out of oven at about 1/2 way through of baking time. I use a metal spatula and turn (carefully). Do this all the way through the pan. This also helps to get your granola more evenly browned. I sometimes even do a 2nd time of turning the granola. I like it nice and golden brown. So, that's the secret is waiting until golden brown. The more you turn it, the quicker it will get browned.

Be sure to check out Ricki's web site. She is  hosting the event today. In fact, she has a great give-a-way going on. You can get there by going to: http://www.dietdessertndogs.com/

Homemade Sugarfree Granola Carob Candy

Today, Alta is hosting the Gluten Free Holiday. If you would like to check out her web site you can go to: http://tastyeatsathome.com/

Today is all about holiday treats that you like to give -a-way. I created these yummy candies so that I could eat candy. This is due to the Candida diet that I have been following for  all most a year now.

Homemade Sugarfree Granola Carob Candy

1/2 c coconut oil
1/4c cashew butter
1/4 c carob powder
1/4 c pecans
20 drops vanilla cream liquid stevia
1/2 c granola ( I make homemade)

Add coconut oil, cashew butter, carob powder, and liquid stevia. Stir to combine. Add pecans and granola. Stir to mix. Drop mixture by teaspoons into a small/mini muffin pan. Then put in your freezer for approx one hour. Take out, and use a plastic disposable knife to remove from pan. These plastic knives will not scratch the pans. Makes 8-10 candies. This candy is sugar free, gluten free, dairy free, and chocolate free.

Being as I love these little candies so much, I think others will too. I think I will give some to others this Christmas. Hey, I know we are about to celebrate Thanksgiving. You could certiantly have these little babies on your menu as well.

Please, stay tuned for the remainder of the Gluten Free Holiday Link Ups.
